Weeknight Recipes – Penne in Vodka Sauce

I’ll admit it; this recipe is a little more time consuming than my usual brand of quick and easy weeknight recipes, but it’s so light on the labor, you’ll barely notice the time go by as the sauce simmers away to perfection!

Penne in Vodka Sauce Recipe

Ingredients:

1 package penne pasta

1 cup vodka

2 – 15 oz. cans diced tomatoes

6 tbsp. salted butter

2 shallots – diced

2 cloves garlic – minced

1 ½ cups heavy cream

¼ tsp. red pepper flakes

½ tsp. salt

1 tsp. fresh basil – chopped, plus extra for garnish

Directions:

Cook the penne pasta in boiling water according to package directions.

In a heavy-bottomed pot, sauté the shallots until translucent, about 3-4 minutes.

Add the vodka and simmer over medium heat for about 15 minutes.

Add the diced tomatoes, basil, red pepper flakes, and garlic and cook for another 20 minutes.

Stir in the heavy cream, reduce heat to low, and simmer for another 15 minutes. Pour sauce over prepared pasta, garnish with basil, and enjoy!
