Super Sides – Citrus Glazed Carrots

This recipe is another one of those wonderfully versatile sides that can change its flavor depending on what you want to serve it with. When citrus juice is called for, you can use lemon, lime, or orange. The marmalade in this recipe really helps to form a lovely glaze on the carrots, and while orange marmalade is certainly the most common (and delicious!) you can mix it up even more by using a ginger marmalade. Try ginger/lime carrots the next time you have some grilled fish for a truly tropical tasting meal.

Citrus Glazed Carrots Recipe

Ingredients:

1 lb. baby carrots

3 tbsp. butter

2 tbsp. fresh-squeezed citrus juice

2 tbsp. brown sugar

1 tbsp. marmalade

1/2 tsp. salt

1/4 tsp. black pepper

Water to cover

Directions:

Place the carrots into a pot and fill with water to cover the carrots by at least one inch.  Bring to a boil over high heat, then cover, reduce the heat to medium/low, and cook at a simmer for 20 – 30 minutes. When the carrots are tender, drain well, then return to the pot.

Return the pot to the burner and reduce the heat to low. Add the butter, citrus juice, brown sugar, marmalade, salt, and pepper. Simmer, uncovered, over low heat for 15 minutes, occasionally shaking the pan to coat the carrots and evenly glaze. Serve hot.
