Scrumptious Tortellini Skewers

These tortellini skewers are the ultimate appetizer. They’re light, yet filling, and totally fun to eat. Tortellini skewers also make a great after-school snack. Serve this treat with a dipping sauce like pesto, or a lightly herbed olive oil.

Tortellini Skewers Recipe

Ingredients:

1 package refrigerated cheese tortellini

1 pint cherry tomatoes

1 can large black olives (pitted)

1 – 12 oz. package marinated fresh mozzarella balls

8 oz. Italian dry salami

Fresh basil leaves

Bamboo skewers*

Directions:

Boil the tortellini in a large pot of water according to package directions. Drain and run cold water over the pasta briefly to cool the tortellini.

Construct your skewers by alternating the tortellini, salami, tomatoes, olives, cheese, and folded basil leaves onto the skewers, in any order you like. Serve with dipping sauce.

*I always advise soaking bamboo skewers in water for about an hour before using. If using them to grill, it prevents burning, but if you’re using them for a raw or cold application, soaking them can also reduce splintering.
