Perfectly Peanut Buttery Cookies

I adore peanut butter cookies, don’t you? They are a timeless treat for all ages. Great for dessert or a fun afternoon snack, these peanut butter cookies are sure to please. This recipe is high-altitude friendly, so bake away!

Peanut Butter Cookies Recipe

Ingredients:

½ cup butter – softened

½ cup chunky peanut butter

½ cup granulated sugar + 2 tbsp. for coating

½ cup packed brown sugar

1/4 tsp. baking soda

1/4 tsp. baking powder

1 large egg

½ tsp. vanilla extract

1 ½ cups all-purpose flour

Directions:

Preheat the oven to 375°.

Use an electric mixer to beat the butter and peanut butter on high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and baking powder and beat until combined. Scrape the sides of the bowl occasionally. Beat in the egg and vanilla until well combined. Beat in half of the flour, then switch to a spoon and stir in the rest.

Shape the dough into 1-inch balls, then roll the balls in the excess granulated sugar to coat. Place the cookie balls on a cookie sheet, then flatten them using the back of a fork. (I like to do this twice, in opposite directions) to make a hatch-mark pattern. Bake for 9 minutes. Remove from the oven once the bottoms are a light brown color. Let cool completely on a wire rack before serving.
