Mini Meatloaf Muffins

These mini meatloaf muffins can be used for just about anything; from a beefy appetizer to a luxurious lunch, or a fun alternative for a meatloaf dinner. This recipe can easily be made keto-friendly by substituting the panko crumbs for pork panko or other bread crumb substitutes (don’t forget the keto ketchup, and omit the brown sugar).

Mini Meatloaf Muffins Recipe

Ingredients:

1 lb. lean ground beef

1 small white onion – chopped

1 large egg

1 cup panko bread crumbs

1/2 tsp. onion powder

1/4 tsp. garlic powder

1/8 tsp. dried oregano – crushed

1/8 tsp. dried basil – crushed

1/8 tsp. dried thyme – crushed

1/4 tsp. kosher salt

1/8 tsp. ground black pepper

1/4 cup ketchup

1/8 tsp. mustard powder

1 tbsp. brown sugar – loosely packed

Directions:

Preheat your oven to 350℉. Prepare a muffin pan by greasing with butter or non-stick spray.

In a mixing bowl, combine the ground beef, chopped onion, egg, panko crumbs, onion powder, garlic powder, oregano, basil, thyme, salt, and pepper and use your hands to knead until thoroughly mixed.

Scoop out ¼ cup of the mixture and shape into a small patty, then place in the muffin pan. Repeat until the mixture is gone. You should get approximately 10 – 12 loaves.

Combine the ketchup, mustard powder, and brown sugar in a small bowl and mix until smooth. Spread a dollop of the ketchup mixture on top of each meat muffin, then bake in the oven for 15 – 17 minutes. Serve hot.
