Better Breakfasts – Avocado Toast with Poached Egg

You’ll feel like you’ve treated yourself to a breakfast at a café when you whip up this delicious dish. You can use any bread you like, and I always do encourage experimentation. For a little more flare, try topping this tasty toast with fresh herbs, like thyme, parsley, or basil.

Avocado Toast with Poached Egg Recipe

Ingredients:

2 large eggs

2 slices bread (whole grain, white, sourdough)

1 cup salad greens

1 ripe avocado

Salt & pepper

Directions:

Toast the bread in your toaster or oven until it is crispy and golden.

Rinse the salad greens and chop them, if desired. Dry well and set aside.

Prepare the avocado by cutting it in half, removing the pit and peel, and slicing it thinly.

Poach the eggs by cracking them into a pot of boiling water and cooking them for 4 – 5 minutes.

While the eggs are cooking, divide the salad greens between the slices of toast, then top with the avocado slices. When the eggs are done, lay one each on the slices of toast. Sprinkle with salt and pepper and serve immediately.
