Fabulous Homemade Fudge

I just love satiny, chocolaty fudge, don’t you? This recipe for is great if you’re looking to stock up on something sweet, or wrap it up in a cute tin and give it as a gift!

Now, let’s address the chocolate. It’s tempting to grab a bag of chocolate chips when making confections, but if you do, please make sure they’re unsweetened! Unsweetened baker’s chocolate bars are also good for this recipe.

Homemade Fudge Recipe

Ingredients:

2 ¾ cups granulated sugar

4 oz. unsweetened chocolate

3 tbsp. butter – separated in half (1 ½ tbsp. each)

1 cup half & half

1 tbsp. corn syrup

1/2 cup chopped walnuts

1 tbsp. vanilla

Directions:

Butter a square baking dish.

Combine the sugar, chocolate, half and half, corn syrup, and 1 ½ tbsp. butter in a medium pot and stir with a wooden spoon over medium heat until the ingredients dissolve.

Increase the heat to high and bring the mixture to a boil (don’t stir!). Reduce the heat to medium/low, cover, and simmer for 3 minutes (still, don’t stir!).

Remove the lid and insert a candy thermometer. Cook at a simmer until the candy reaches 234° (STILL, don’t stir!). As soon as the candy comes up to temp, remove from the heat and add the remaining 1 ½ tbsp. butter, but DO NOT stir it in at this point.

Let the mixture cool for 10 minutes, then add the vanilla and chopped walnuts and (now, you can!) stir into the fudge. Continue to mix the fudge until the texture turns from shiny to matte, then pour into the prepared baking dish. (Mixing the fudge until it becomes matte is super important to the texture of the finished confection. Be patient, it may take a while!)

Let the fudge cool completely to set, then cut into squares. Enjoy!
