Weeknight Recipes – Shrimp Scampi

Shrimp scampi is a quick, fresh, and tasty dish. It is a much lighter alternative to a heavy, sauce-based pasta dinner, in spite of the butter. This recipe is so basic, you will be done cooking in a matter of minutes.

Shrimp Scampi Recipe

Ingredients:

10 oz. angel hair pasta

1 ½ lbs. large raw shrimp

¼ cup melted butter

¼ cup olive oil

5 cloves garlic – minced

¼ white wine

½ tsp. red pepper flakes

Salt & pepper

2 tbsp. fresh basil – chopped

2 tbsp. fresh lemon juice

Directions:

Cook the angel hair pasta according to the package directions. Strain and set aside, retaining a small amount of the pasta cooking water.

Heat a large skillet over medium/high heat. Melt the butter, then add the olive oil and heat through. Add the white wine, basil, red pepper flakes, and salt & pepper to taste, then simmer for 2 minutes to reduce the wine.

Add the shrimp and sauté until they turn pink, about 2 – 5 minutes. Be careful not to overcook the shrimp at this point, or they will become rubbery. Remove the shrimp from heat just as they turn pink.

Stir in the basil and lemon juice and toss with the drained angel hair pasta. Add a tablespoon of the pasta cooking water if the pasta is too dry after tossing. Serve with grated parmesan on the side, if desired.
