Weeknight Recipes – Shrimp Fajitas

 I love how quickly and easily this fresh family feast comes together. Simply char up some tortillas for serving, and garnish with avocado, salsa, guacamole, cilantro, or any of your own favorite fajita toppings.

Shrimp Fajitas Recipe

Ingredients:

1/2 lb. raw shrimp – peeled and deveined

1 red bell pepper – sliced

1 orange bell pepper – sliced

1 yellow bell pepper – sliced

1 small white onion – sliced

2 tbsp. olive oil

1 tsp. chili powder

1/4 tsp. cumin

1/8 tsp. cayenne pepper

1/4 tsp. salt

1/8 tsp. ground black pepper

1 lime

Directions:

Preheat your oven to 450℉. Prepare a baking sheet by lining it with a sheet of parchment paper.

Arrange the sliced veggies and shrimp on the baking sheet and drizzle with olive oil. Sprinkle on the seasonings, then toss to coat evenly.

Place the baking sheet in the oven on the middle rack and roast for 8 minutes.

Switch to the broiler, set to high, and char the veggies for 1 – 2 minutes, checking frequently to make sure they don’t burn.

Remove the baking sheet from the oven and squeeze the juice from half of the lime over the shrimp and vegetables, reserving the other half, sliced, for serving.

Season again with salt and pepper, as needed. Serve in warm tortillas.
