Weeknight Recipes – Curried Chickpeas

This spicy, savory, and sumptuous vegetarian dish is amazing served hot over a bed of white steamed rice and topped with fresh cilantro.

Curried Chickpeas Recipe

Ingredients:

1 cup snow peas – sliced crosswise

1 small white onion – diced

1 large carrot – sliced thin

1/2 red pepper, thinly sliced

2 teaspoons vegetable oil

2 teaspoon garlic – minced

2 – 14 oz. cans coconut milk

3 tablespoons red curry paste

2 tbsp. lime juice

1 ½ teaspoon yellow curry powder

1 – 15 oz. can chickpeas

1/2 teaspoon garlic powder

1 teaspoon salt

Directions:

Heat the vegetable oil in a large skillet over medium/high heat. Add the snow peas, onion, carrots, and red peppers. Cook for 5 minutes, until tender. Add the garlic and cook for 1 minute more.

Add the coconut mil, red curry past, lime juice, yellow curry powder, chickpeas, garlic powder, and salt to the skillet and stir to combine. Cook for another 5 minutes, stirring, until the mixture is heated through and thickened. Add more salt if desired, then serve hot.
