Veggie Pizza Bites

These savory little veggie pizza bites are not only simple to make, they’re kid approved. They make a great snack, or you can serve them as a low-carb appetizer option at your next party. Add toppings like sliced olives, mini pepperoni, or diced bell pepper.

Veggie Pizza Bites Recipe

Ingredients:

1 tbsp. olive oil

1 large zucchini – sliced into rounds ¼ inch thick

2 cups marinara sauce

1 cup mozzarella cheese – shredded

2 tbsp. fresh basil leaves – chopped

1/2 tsp. kosher salt

1/4 tsp. pepper

Directions:

Preheat your broiler. Place the rack in the topmost slot of your oven, if you have an in-oven broiler. Line a baking sheet in foil.

Heat the olive oil in a large skillet over medium/high heat, then add the zucchini along with the salt and pepper. Cook the zucchini rounds until they begin to turn a golden brown on both sides, about 2 – 3 minutes per side.

Remove the rounds to the prepared baking sheet and arrange them in a single layer. Top each piece of zucchini with a dollop of marinara sauce, toppings (if desired), and a sprinkle of the shredded mozzarella cheese.

Place under the broiler and cook for 1 – 2 minutes, until the cheese is melted. Remove from the broiler and top with a pinch of chopped fresh basil. Serve hot.
