I enjoy recipes like these pinwheels for those times when you have to put out a spread at a moment’s notice. They’re perfect for drop-in guests, last minute meet-ups, or a quick snack for a class party. These pinwheels are virtually effortless.

Fiesta Tortilla Pinwheels Recipe

Ingredients:

8-10 – 10” flour tortillas

1 brick cream cheese – softened

½ cup cheddar cheese – shredded

¼ cup black beans – drained and rinsed

1 – 4 oz. can diced green chilis – drained

2 tsp. chili powder

½ tsp. cumin

½ tsp. onion powder

¼ tsp. garlic powder

¼ tsp. salt

¼ tsp. black pepper

3 tbsp. cilantro – chopped

Directions:

Use the back of a fork to mash the black beans into a chunky paste.

In a medium mixing bowl, combine the cream cheese, shredded cheddar cheese, black bean paste, diced green chilis, and mix them well. Add the chili powder, cumin, onion powder, garlic powder, salt and pepper and stir to combine.

Lay out a tortilla and spread a generous amount of the cream cheese mixture evenly around the tortilla. Sprinkle cilantro over the cream cheese, then roll up the tortilla. Repeat until the mixture is gone.

Chill the tortilla rolls in the refrigerator for 10 minutes.

Using a sharp knife, slice the tortilla rolls into 1” wide medallions. Arrange on a platter and serve with iced tea.
