Super Sides – Roasted Cauliflower

This super side is certainly not your grandmother’s cauliflower! A far cry from bland and boring steamed cauliflower, these beautifully seasoned florets will complement any meal.

Roasted Cauliflower Recipe

Ingredients:

1 head cauliflower

1 – 2 tbsp. olive oil

1/2 tsp. sea salt

1 tbsp. butter

1/4 tsp. ground cumin

1/4 tsp. ground coriander

1/4 tsp. red pepper flakes

1/4 cup blanched almonds – finely chopped

1 lemon

Directions:

Preheat your oven to 400°.

Break down the cauliflower into florets. Bring a pot of salted water to a boil, then blanch the florets for 3 minutes, then drain. Set aside to let the cauliflower dry.

Melt the butter in the microwave or in a small sauce pan.

Once dried, transfer the cauliflower to a mixing bowl and toss with the olive oil and butter. Add the cumin, coriander, red pepper flakes, and blanched almonds and toss to coat the florets well.

Transfer the seasoned cauliflower to a baking dish and bake for 10 minutes. Meanwhile, juice and zest the lemon. Remove the dish from the oven and stir the cauliflower, then add the lemon juice and zest and mix well. Replace in the oven and roast for 10 – 15 minutes more, until the florets are browned and a bit crispy.
