Slow Cooker – Tuscan Soup

Take your taste buds for a vacation, while your slow cooker does all the work for you! This rich and delicious soup is simple, yet flavorful. The combination of the rich sausage, savory beans, and fresh kale makes this one of those go-to recipes.

Tuscan Soup Recipe

Ingredients:

1 lb. smoked sausage

1 white onion – diced

2 medium carrots – diced

6 cloves garlic – minced

8 cups chicken stock

2 – 15 oz. cans cannelloni beans

2 sprigs fresh rosemary

2 sprigs fresh thyme

1 bunch kale – destemmed and roughly chopped

Salt and black pepper

1/8 tsp. red pepper flakes

Directions:

Preheat your slow cooker on the low setting.

Combine the sausage, onion, garlic, cannelloni beans, chicken stock, and red pepper flakes in the crock of your slow cooker and sprinkle with salt and pepper. Cook on low for 4 hours.

Add the carrots, rosemary, and thyme to the pot and continue to cook for another 3 hours.

Add the chopped kale to the pot and cook for another 20 – 30 minutes, until the kale is wilted through and the flavors have integrated. Season again with salt and pepper to taste. Serve hot, garnished with freshly grated parmesan cheese, or even hot sauce for an extra kick.
