Refreshing Mango Salsa

This easy mango salsa is perfect for relaxing on your deck or even catching some sun lakeside. Mango salsa is a light alternative to heavy snacks is perfect for a hot summer day. This healthy and tasty recipe is so refreshing when made with fresh fruit and veggies. It is the perfect summer-time snack, a light side dish for a grilled protein, or a great party appetizer for your next summer bash! Serve this salsa cold with tortilla chips for dipping…or just eat it up with a spoon!

Mango Salsa Recipe

Ingredients:

1 medium mango – diced

1 medium tomato – chopped

2 – 4 red, green, yellow, or orange sweet peppers* – diced

1 small lime

1/2 tsp. salt

1/8 tsp. black pepper

Directions:

Carefully peel and pit the mango, then dice it. Chop the tomatoes, removing the seeds if desired. Finely dice the sweet peppers and red onion.

Add the mango, tomatoes, sweet peppers, and red onion to a mixing bowl, along with the lime juice, salt, and pepper. Toss the ingredients well to mix.

Chill for 15 minutes, then serve cold.

*I do not mean to use 2 – 4 bell peppers, but the smaller, sweeter peppers. If you can only find bell peppers, use 1 medium bell pepper instead.
