No-Bake Peanut Butter Oatmeal Cookies

These fun, easy, yummy cookies are perfect for those balmy summer days when you just can’t bear to turn on your oven.

No-Bake Peanut Butter Oatmeal Cookie Recipe

Ingredients:

1 cup granulated sugar

3/4 cup brown sugar – packed

1 stick salted butter – cubed

1/2 cup whole milk

1 cup smooth peanut butter

1 ½ tsp. vanilla extract

1/2 tsp. kosher salt

1 ½ cups old-fashioned oats

Directions:

Combine the granulated sugar, brown sugar, cubed butter, and milk in a saucepan and place over medium heat. Bring the sugar mixture to a boil and cook for 1 minute.

Remove the saucepan from the heat and stir in the vanilla, peanut butter, and salt until smoothly combined. Fold in the oats.

Drop the cookies by the tablespoonful onto a parchment-lined baking sheet and chill in the refrigerator for 10 minutes. Remove the cookies from the fridge and let set on the counter until the cookies are cooled and firm, at least 20 minutes.
