Easy, delicious, and keto-friendly, this meatball parmesan casserole is a wonderfully hearty dinner for these chilly fall evenings.

Meatball Parmesan Casserole Recipe

Ingredients:

1 lb. ground Italian sausage

1 lb. ground turkey

1/2 cup mozzarella cheese – shredded

1/4 cup parmesan cheese – shredded

1 large zucchini – grated

1 large egg

1/4 cup white onion – minced

2 cloves garlic – minced

2 tsp. dried basil

1 tsp. kosher salt

1 cup low-carb pasta sauce

1 cup provolone cheese – shredded

Directions:

Preheat your oven to 400℉. Grease a 2-quart casserole dish with butter or cooking spray.

Add the Italian sausage, ground turkey, shredded mozzarella and parmesan, zucchini, egg, onion, garlic, basil, and salt to a large mixing bowl and stir well to combine (or use your hands, like I do!). Shape the meat into about 2 dozen meatballs and arrange them in a single layer in the casserole dish.

Bake at 400℉ for 30 minutes, then carefully drain the grease and excess liquid from the baking dish.

Pour the sauce evenly over the meatballs, then sprinkle with the provolone cheese. Return to the oven and continue to bake for 10 – 15 minutes, or until the cheese is melted and bubbly. Serve hot.
