Freshly Baked Lemon Bars

Calling all lemon lovers! Spring is in the air, and these sweet and tart lemon bars are the perfect treat to celebrate the coming season.

Lemon bars are a classic dessert, and with good reason! Creamy, tangy lemon filling over a soft shortbread crust makes these lemon bars a tasty and beautiful addition to any table.

Lemon Bar Recipe

Ingredients:

For the crust:

1 ½ sticks salted butter – cut into small cubes

1/3 cup confectioner’s sugar

1 ½ cups flour

For the filling:

4 eggs – beaten

1 cup lemon juice

1 tbsp. lemon zest

1/3 cup flour

1 ¾ cup granulated sugar

1/8 tsp. salt

Extra confectioner’s sugar for dusting

Directions:

Preheat oven to 375°.

Combine the crust ingredients in a food processor and process until dough forms a ball, about 30 seconds.

Line a square baking pan (8×8) with parchment paper and pack the crust dough evenly on the bottom of the pan. Bake the crust at 375° for 20 minutes.

Meanwhile, beat the eggs, lemon juice, lemon zest, flour, sugar, and a pinch of salt until combined.

When the crust is done, remove from the oven and reduce heat to 350°. Pour the lemon/egg mixture over the top.

Bake the lemon bars at 350° for another 20 minutes, or until the tops are set but not browned.

Remove from the oven and allow to cool completely before dusting with the extra confectioner’s sugar. Cut into squares and serve.
