Herbed Goat Cheese & Tomato Bites

I always enjoy putting out fresh and fancy hors devours at parties, especially when they’re as easy as this recipe. These shockingly simple goat cheese cups use frozen puff pastry, which really cuts down on time. These little beauties work for any seasonal event; they’re light enough for summer, yet savory enough for the colder months. Whenever you serve them, they’re guaranteed to be a hit!

Herbed Goat Cheese and Tomato Bites Recipe

Ingredients:

8 oz. frozen puff pastry – thawed

4 oz. goat cheese – crumbled

1 tsp. herbs de provence

1/4 tsp. sea salt

10 – 15 cherry heirloom tomatoes – halved

Fresh basil leaves

Directions:

Preheat your oven to 400° and grease a mini muffin tin using cooking spray.

Roll out the puff pastry dough to a 1/4-inch thickness on a lightly floured countertop. Using a sharp knife, cut the pastry into 2-inch squares. Gently press the squares into the mini muffin cups, then place in the refrigerator while the filling is prepared.

In a mixing bowl, combine the goat cheese, herbs de provence, and sea salt, stirring to combine.

Spoon 2 tablespoons of filling into each pastry cup.

Bake for 16 – 20 minutes, until they turn a light golden brown. Remove from the oven and let stand for 3 – 5 minutes, then garnish each pastry with the halved tomatoes and basil leaves. Serve immediately.
