Danish Butter Cookies

If you’re anything like me, your eyes light up when you see that signature blue tin of butter cookies. This recipe is a simplified version of a classic Danish butter cookie that’s easy to make at home when you’re craving that extra luscious something sweet.

You’ll feel like a victorious viking when you’re munching on these decadent Danish butter cookies. They’re absolutely amazing with a steaming hot cup of coffee. If you’re looking for a lighter recipe, keep on looking. But you only live once, so go ahead, use all that butter, you naughty thing!

Danish Butter Cookies – Recipe

Ingredients:

½ lb. salted butter (room temperature)

4 oz. confectioners sugar

10 oz. flour

1 tsp. vanilla extract

1 tbsp. whole milk

Directions:

Using a stand mixer or hand mixer, beat room temperature butter, confectioners sugar, and vanilla extract until fluffy and light. Slowly add the flour and mix until combined and a little crumbly. Add the milk, and mix for about 20 seconds, or until the dough clumps into a ball. Use parchment paper to roll the dough into an even cylinder.

Wrap the dough with the parchment and place in the freezer for about 30 minutes, until partially frozen. Preheat oven to 325° and line a baking sheet with a fresh sheet of parchment paper. Slice dough into rounds and bake in their almost-frozen state until golden, about 30 minutes. Let cool on the baking sheet for 5 minutes, then remove to cooling racks and allow to cool completely before enjoying.
