Curried Beef & Broccoli

This recipe is super quick and easy, almost enough to earn the title of a weeknight recipe, if not for the prep time involved. However, if you’re quick in the kitchen, this recipe goes by in a snap. This fun take on a traditional broccoli beef dish is fantastic when served over a bed of steamed white rice. Enjoy!

Curried Beef & Broccoli Recipe

Ingredients:

3 cups broccoli florets

1 tbsp. vegetable oil

1 lb. beef – sliced into 1” strips

1 small white onion – diced

4 cloves garlic – minced

1 tbsp. ginger – minced

1/2 tsp. salt

1/2 tsp. black pepper

1 ½ tsp. curry powder

2 cups chicken stock

1 ½ tbsp. corn starch

2 tsp. sugar

1/4 cup plain Greek yogurt

Directions:

Par-cook the broccoli florets by boiling them for 3 minutes. Strain and set aside.

Toss the beef strips with the salt, pepper, and ½ tsp. of the curry powder. Heat the oil in a large skillet over high heat, then add the beef and brown in batches. Remove the browned meat and set aside.

Add more oil to the pan if necessary and add the onion, garlic, ginger, and remaining 1 tsp. curry powder. Reduce the heat to medium/high and cook for 2 minutes. Add the chicken stock, corn starch, and sugar and stir to combine. Boil over medium heat for 5 – 10 minutes, until the sauce has thickened. Return the meat and broccoli to the pan and simmer over low heat for 5 minutes.

Remove the pan from the heat and stir in the yogurt. Add additional salt and pepper if desired to season to taste. Serve hot over steamed rice.
