Broccoli Beef Noodle Bowl

This Asian-inspired recipe for broccoli and beef with noodles is just what you need when you’ve been craving some Chinese take-out. Thin slices of beef and bits of broccoli soaked in sauce will have you coming back for more.

Here’s a tip for getting a really nice, thin slice on the beef: Pop the steak into your freezer for about 20 minutes to partially freeze it. The more solid the beef, the easier it is to slice. Don’t go too far and freeze it solid, though!

Broccoli Beef with Noodles Recipe

Ingredients:

8 oz. dry Chow Mein noodles

3 cups broccoli florets

1 lb. chuck steak

1 medium onion – cut into ½” slices

3 cloves garlic – minced

2 tbsp. vegetable oil

1 tbsp. corn starch

¼ tsp. salt

¼ tsp. pepper

1 ½ cups beef broth

1 tsp. soy sauce

¼ cup tomato paste

½ tsp. prepared horseradish

Directions:

Prepare the beef by trimming the fat from the meat, then slicing the beef into thin, bite-sized strips.

Parboil the Chow Mein noodles by cooking them in boiling water for 5 minutes. Add the broccoli florets to the boiling water during the last 3 minutes of cooking to soften. Drain the noodles and broccoli and set aside.

Heat the oil in a large skillet (or wok) over high heat. Add the beef, onions, and garlic and stir-fry until the meat reaches desired doneness and the onions are tender.

Meanwhile, mix the beef broth, soy sauce, tomato paste, horseradish, salt, pepper, and cornstarch in a small bowl until combined.

When the beef and onions are done, push them to the edges of the pan, making a bare spot in the middle. Add the mixed sauce to the middle of the pan and cook, stirring, until the sauce is thickened and bubbly.

Incorporate the sauce back into the meat and onions, then add back in the noodles and broccoli, stirring to combine, and cook for 5 minutes more. Serve immediately.
