Better Breakfasts – Chili-Cheese Pie

I love this hearty, quick, and easy breakfast. It’s not always easy to put a hot meal on the table in the morning, but this recipe for chili-cheese pie makes breakfast a blast.

You can always mix it up a little bit with the cheese; try pepper jack for a spicier meal, or gouda for a smoky touch. I tend to use Bisquick for my baking mix, but any generic variation thereof works just as well.

Chili-Cheese Pie Recipe

Ingredients:

2 – 4 oz. cans chopped green chilies – drained

1 lb. cheddar cheese – grated

2 cups milk

4 large eggs

1 cup pre-mixed baking mix

Directions:

Preheat your oven to 450° and grease a pie plate using butter or cooking spray.

Layer the drained green chilis and the grated cheddar cheese on the bottom of the pie plate. Set aside.

Combine the milk, eggs, and baking mix in a medium bowl and beat with an electric mixer (or whisking vigorously!) for 30 seconds on high. Pour the mixture over the chilis and cheese in the pie plate.

Bake at 450°, uncovered, for 25 – 30 minutes, or until a knife inserted into the center of the pie comes out clean.

Cool the pie for 15 minutes, then cut into wedges and serve warm, topped in salsa.
