Better Breakfasts – Blueberry Parfaits

Parfaits are a wonderful, fresh, light breakfast. They’re beautifully balanced to power your day. This recipe takes your basic parfait up a notch; cooking the blueberries into syrupy goodness before cooling and layering makes these parfaits outstanding. You can use a glass to layer your parfait, but I think they’re super cute in clean mason jars.

Blueberry Parfaits Recipe

Ingredients:

3 cups frozen blueberries

1 cup granola of choice

3 cups vanilla yogurt

Directions:

Cook the frozen blueberries in a saucepan over medium/high heat for 5 minutes. Stir well, then reduce the heat to medium/low and continue to cook at a simmer for 5 – 8 minutes, stirring frequently. When the berries reach a syrupy texture, remove from heat and set aside to cool completely.

When the blueberries have cooled, begin layering the granola, yogurt, and berries in your serving vessels. Serve immediately or chill until ready to serve.
