Bacon Chicken Salad

This lovely lunch recipe savory, filling, and high in protein. Try this chicken salad as a sandwich with lettuce and tomoato, in lettuce cups, as a wrap, or all on its own in a bowl. Great for workdays or weekends, this lunch will make your day.

Bacon Chicken Salad Recipe

Ingredients:

1 lb. boneless skinless chicken breasts – pounded to ½ inch thickness

1/2 lb. bacon

1/2 cup mayonnaise

2 green onions – sliced

1/4 tsp. garlic powder

1/4 tsp. onion powder

Salt & pepper

Directions:

Chop the bacon, then cook the bacon bits over medium/high heat in a large skillet until they are crispy. Remove from the skillet and set on a plate lined with paper towels to drain the grease.

Sprinkle the ¼-inch thick chicken pieces with the garlic powder, onion powder, salt and pepper. In the same pan, cook the chicken breasts in the bacon grease over medium heat for 3 – 4 minutes on each side. Remove from the skillet and set aside to cool, then remove to the refrigerator to chill.

Once the chicken is chilled, chop it into bite-sized pieces or shred and toss in a large mixing bowl along with the bacon, mayonnaise, and green onions, stirring well to combine. Season with additional salt and pepper to taste, if desired.
