If you’re looking for a light, delicious lunch, look no further! This Greek salad will delight with simple yet satisfying flavors. Greek (aka Khoriatiki) salad is a staple in Mediterranean cuisine, and for good reason…it’s both nutritious and delicious!
Greek salad is a refreshing treat for lunch, and while it’s light fare, it’s surprisingly filling. It also works well as a fresh and easy side for dinner time. This salad is particularly wonderful when it accompanies salmon or chicken dishes.
Greek Salad Recipe
Ingredients:
1 pint mini tomatoes – halved
1/2 cup kalamata olives – rough chopped
4 oz. feta cheese – crumbled
1 cucumber – sliced into half-moons
1 red bell pepper – seeded and chopped
For the dressing:
1/4 cup olive oil
1 ½ tbsp. red wine vinegar
1 tbsp. lemon juice
1 small clove garlic – minced
1 tsp. oregano
1/4 tsp. salt
Directions:
Prepare the salad by halving the tomatoes, chopping the kalamata olives into large chunks, slicing the cucumber into thin half-moons, and seeding and chopping the bell pepper. Combine the ingredients in a large bowl. Crumble the feta over the salad.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, and salt. Add as much as desired to the salad and toss to dress.
