Binge-Worthy Beer & Cheese Dip

By Victoria Heerschap

Here’s a binge-worthy treat to enjoy when you’re binge-watching your favorite shows. You won’t be able to resist dipping again and again into this creamy, decadent beer and cheese goodness!

It’s the beer that takes this fondue and makes it a fun-due! You can use any beer you have in your fridge, but I find that I enjoy this made with a lager.

Set it out in your crock-pot or fondue pot, along with a platter of dippable treats. Try this dip with bread, crackers, chips, pretzels, apple slices, carrots, or broccoli florets.

Cheese Beer Dip Recipe

Ingredients:

2 tbsp. butter

2 tbsp. flour

1/2 cup whole milk

12 oz. beer of choice

1/4 tsp. salt

1/4 tsp. garlic powder

1/8 tsp. cayenne

4 cups cheddar cheese – shredded

Directions:

In a medium, heavy-bottom pot, melt the butter over medium heat. Whisk in the flour and cook, whisking, until golden brown. Add the milk slowly, whisking constantly, mixing until smooth. Reduce the heat to medium-low and gently simmer, continuing to whisk, until the sauce has thickened slightly.

Stir in the beer, salt, garlic powder, and cayenne, increase heat back to medium and simmer, whisking occasionally, for about 3 minutes. Remove the pot from the heat and, using a spoon, stir in the shredded cheese, one cup at a time, until you achieve creamy perfection. Taste and adjust the seasoning if necessary, then transfer the dip to a warmer, to keep it at a dippable temperature. Enjoy!
