Super Sides – Yellow Rice

Do you love rice, but are tired of the same old thing? Yellow rice seasoned with turmeric is an elegant spin on a classic side. The bright color imbued by the turmeric makes this side a joyful addition to any dinner. I especially enjoy yellow rice when it accompanies a grilled pork chop or some roasted chicken. It pairs well with brussels’ sprouts or peas. This recipe makes a rather large batch; great for a gathering or for an easy, heat-it-up side later in the week.

Yellow Rice Recipe

Ingredients:

2 cups jasmine rice

1 small yellow onion – diced small

3 cups chicken broth

1 tsp. turmeric

1/2 tsp. minced garlic

1/4 tsp. cumin

1/8 tsp. cinnamon

1 bay leaf

2 tbsp. salted butter

Directions:

Melt the butter in a high-sided skillet or medium pot. Add the onion and sauté until translucent, about 3 minutes. Stir in the garlic, turmeric, cumin, and cinnamon and heat for 1 minute over medium heat. Add the jasmine rice and toast, stirring, for 2 minutes until rice is golden and nutty smelling. Be careful not to burn your rice at this point! Add the broth and the bay leaf and increase the heat to high. Bring the rice to a boil, then reduce the heat to low. Simmer, covered, for 20 minutes. Remove from heat and allow to rest for 10 minutes, then remove the bay leaf and fluff the rice with a fork.
