Better Breakfasts – Easy Apple Turnovers

Sometimes a sweet breakfast can make for a sweet day. These yummy, easy apple turnovers definitely make for a better breakfast!

Apple Turnover Recipe

Ingredients:

1 sheet frozen puff pastry – thawed

1 tbsp. butter

2 medium Honeycrisp apples – peeled & diced

¼ cup brown sugar

1 tbsp. cornstarch

1 tbsp. lemon juice

1 tsp. lemon zest

1 tsp. ground cinnamon

1/4 tsp. ground nutmeg

1/8 tsp. ground ginger

1 tsp. vanilla extract

1 egg – beaten with 1 tbsp. water

Directions:

Preheat your oven to 400°.

Melt the butter in a skillet over medium heat. Add the dices apples to the hot butter and cook for 3 minutes. Add the lemon juice, brown sugar, cornstarch, cinnamon, nutmeg, ginger, and lemon zest. Cook for 5 minutes more, until the apples are tender and the juices are thickened.

Remove the apple mixture from the heat and stir in the vanilla extract. Set the filling aside to cool.

Flatten the puff pastry on a floured countertop, then cut into 4 squares. Brush the edges of the squares with the egg wash.

Divide the apple mixture evenly between the pastry squares, in the middle. Fold the pastry in half around the apples, diagonally and gently press the edges together. Use a fork to gently press the edges, sealing them and making a decorative pattern.

Move the pastries to a baking sheet lined in parchment paper. Slit each turnover on the top. Bake for 15 – 17 minutes, until the tops are golden brown.

Cool the turnovers on a wire rack for 10 minutes before serving.
