Weeknight Recipes – Lasagna Squash Boats

This healthier alternative to lasagna is a great, quick, family-friendly meal that you’ll rely on again and again. Prepping the squash in the microwave is the key to making this a speedy dinner that will hit the table in no time flat.

Lasagna Squash Boats Recipe

Ingredients:

2 small spaghetti squash

1 cup ricotta cheese

1/4 cup grated parmesan cheese

8 oz. frozen broccoli – thawed and chopped

1 cup marinara sauce

1/4 cup shredded mozzarella cheese

1/2 tsp. salt

1/4 tsp. black pepper

1/2 tsp. dried oregano – crushed

Directions:

Slice the squash in half lengthwise, then scrape out and discard the seeds.

Place the squash halves, face down, on a piece of parchment paper in the microwave. Cook on high for 10 minutes. The squash should be just tender.

Preheat your broiler.

In a mixing bowl, combine the ricotta and parmesan cheese and thawed, chopped broccoli.

When the squash comes out of the microwave (careful, they’re hot!), season the cut sides with the salt, pepper, and oregano. Using a fork scrape up the squash strands, and leave them loosened inside the squash.

Divide the cheese and broccoli mixture evenly between the cut halves, then add a layer of the marinara sauce. Sprinkle with the shredded mozzarella.

Cook under the broiler for 3 – 5 minutes, checking frequently. The squash is done when the filling is heated through and the cheese has browned. Serve hot.
