Easy Pizza Quesadillas

These fun and easy pizza quesadillas are fantastic for an appetizer, snack, lunch, or even a quick dinner. Add any of your favorite traditional pizza toppings, like cooked Italian sausage, ham, green peppers, or sliced olives.

Pizza Quesadilla Recipe

Ingredients:

8 flour tortillas

1 jar pizza/marinara sauce

1 package sliced pepperoni

2 cups shredded mozzarella cheese

Dried basil for sprinkling

2 tbsp. butter – divided

Directions:

Lay out four of the flour tortillas and spread a thin layer of the red sauce on each.

Top each sauced tortilla with ¼ – ½ cup shredded mozzarella cheese.

Add a layer of pepperoni on each tortilla, then sprinkle with the dried basil.

Lay out the remaining four tortillas and spread a very thin layer of sauce on each.

Top the dressed tortillas with the remaining sauced tortillas.

Heat a large skillet over medium/high heat and melt ½ tbsp. of the butter, spreading evenly around the pan. Cook the quesadillas in batches in the hot butter until the tortillas are crispy and golden, adding more butter as necessary with each flip/batch.

Serve hot, with additional sauce for dipping, if desired.
