Super Sides – Caramelized Brussels Sprouts

Everyone at my house loves this recipe! This is my favorite way to get my kids to eat their Brussels sprouts. The tangy lemon and sea salt, paired with the sweetness of a caramelized sprout make for an amazingly simple yet tasty side dish that pairs well with just about anything.

Caramelized Brussels Sprouts Recipe

Ingredients:

1 lb. small Brussels sprouts

1 large lemon

1/2 tsp. fine sea salt

2 tbsp. olive oil

Directions:

Prepare the Brussels sprouts by washing them thoroughly. Slice off the woody bottoms, leaving the top 2/3 of the sprout intact. Peel off the outermost leaves from the sprout and discard. Cut each prepared sprout in half.

Lay the sprouts, cut-side down in a high-sided skillet or shallow pot and fill with water just until the sprouts begin to float. Simmer the sprouts over medium/high heat until they are just fork tender, then drain them and reserve the sprouts.

Once the skillet/pot is dry, return it to the heat and add the olive oil. When the oil begins to ripple, return the sprouts to the skillet, cut-side down, and cook for about 5 minutes over high heat. Do not stir or shake the pan. Check the sprouts during the last 2 minutes of cooking, to ensure they do not burn. The sprouts are caramelized when they have a rich, dark-brown coloration on the bottom. Some of the loose leaves may become crisp, and that’s a good thing. They’re delicious.

Once the sprouts are browned, stir or shake the pan vigorously to toss them, giving the rounded sides some time over the heat (you can also manually flip them all with a fork or spoon, if you’re a perfectionist). Cook for an additional 3 minutes.

Remove the sprouts to a serving bowl. Slice the lemon in half and squeeze the juice over the sprouts, alternating with a sprinkling of sea salt. Taste as you go, adding more lemon and salt in turns until you achieve perfection. Serve immediately.
