West-Coast Club Sandwiches

This classy lunch is a total classic. The avocado and spicy mayo give these sandwiches a special, west-coast Cali touch. You’ll feel like you’re on vacation when you sit down to these sumptuous sandwiches.

West Coast Club Sandwich Recipe

*Recipe makes 3 whole sandwiches (12 pieces)

Ingredients:

1/2 cup mayonnaise

2 tbsp. hot sauce

9 slices white bread – toasted

Butter lettuce

1 ripe avocado – sliced

2 Roma tomatoes – thinly sliced

Thin sliced deli turkey

1/2 lb. bacon

Salt & Pepper

Directions:

Toast the bread slices. Prepare the avocado by removing the pit and peel, then slicing it.

Cook the bacon until it is crisp, and set aside to cool on a paper-towel lined plate. Cut down the strips to desired sandwich size once cooled.

In a small bowl, combine the mayo and the hot sauce, mixing well to blend. Spread the sauce on one side of each piece of toast.

Layer the butter lettuce and the avocado slices on three of the pieces of toast and sprinkle lightly with salt and pepper. Top this with another slice of toast, then add more lettuce, turkey, tomato, and bacon strips, then another layer of lettuce. Divide the toppings evenly between the sandwiches. Top with remaining toast, spread side down.

Quarter the sandwiches into triangles and secure each piece with a toothpick. Serve with pickles, chips, fries, or potato salad.
