Super Sides – Green Rice

This cheesy green side dish is a great way to get your picky eaters to devour their vegetables. It’s great served with any entrée, but I love it with fish and chicken the most. Because it’s a heavy side, I like it paired with a lighter protein. Enjoy!

Green Rice Recipe

Ingredients:

3 cups cooked white rice

1 cup Monterey Jack cheese – shredded

1 cup ricotta cheese

1 cup mayonnaise

1 clove garlic – minced

1 cup frozen chopped broccoli

1 cup frozen peas

2 green onions – thinly sliced

¼ tsp. black pepper

½ tsp. salt

¼ tsp. paprika

Directions:

Preheat your oven to 375°. Grease a 2-quart casserole dish.

Thaw the frozen broccoli and peas and drain them well.

In a large bowl, mix ¾ cup of the Monterey Jack cheese with the ricotta, garlic, mayonnaise, paprika, salt, and pepper. Stir in the rice, broccoli, peas, and green onions. Mix well to combine.

Spoon the mixture into the prepared casserole dish and bake for 20 minutes, uncovered.

Remove the casserole dish from the oven and top with the left-over ¼ cup of Monterey Jack cheese, then return to the oven and continue to bake for another 5 – 10 minutes, or until cheese is melted and lightly browned. Garnish with additional green onion slices, if desired.
