Homemade Vanilla Pudding

Talk about a classic; vanilla pudding is one of the great comfort foods. It’s one of those perfect desserts because it’s simple, elegant, tasty, and you can pair it with just about anything. Add some cookies, chocolate, or fruit to jazz it up, or spoon it into a cookie-crumb pie crust and add a little whipped cream on top for a fast and easy cream pie!

Vanilla Pudding Recipe

Ingredients:

¾ cup granulated sugar

3 tbsp. cornstarch

3 cups whole milk

4 egg yolks – beaten

1 tbsp. butter

1 ½ tsp. pure vanilla extract

Directions:

Combine the sugar, cornstarch, and milk in a saucepan, stirring to combine. Cook over medium heat, stirring, until thickened and bubbly. When the mixture begins to bubble, set a timer for 2 minutes and continue to stir and cook.

When the 2 minutes is up, remove from heat.

In a mixing bowl, beat the egg yolks, then very slowly stir in 1 cup of the hot milk mixture to temper the eggs. Do not go too fast at this point, or the eggs will curdle. Add the egg/milk mixture from the mixing bowl into the saucepan.

Bring the pudding to a gentle boil, then reduce the heat to low. Cook, stirring, for 2 minutes, then remove from heat. Stir in the butter and the vanilla extract. Pour the pudding into a bowl and cover with plastic wrap, allowing the wrap to touch the surface of the pudding, to discourage it forming a thick skin. Chill in your refrigerator for 2 hours, and do not stir during the cooling process. Serve cold.
