Fruity Oatmeal Cookie Bars

These fruity oatmeal cookie bars make a great dessert, snack, or even breakfast!

I think the best part about this recipe is the variety! Since we’re using canned pie filling, you can make whatever flavor you like (assuming your market carries it). Using apple pie filling? Add a little cinnamon to your dry mix! Blueberry pie filling is amazing with these bars, as is a mixed berry or peach filling. Why not try them all?

Fruity Oatmeal Cookie Bars Recipe

Ingredients:

1 cup + 3 tbsp. flour

1 cup rolled oats (quick cooking)

2/3 cup packed brown sugar

1/8 tsp. baking soda

1 stick butter

1 – 21 oz. can pie filling (flavor of choice)

Directions:

Preheat your oven to 375° and grease a 9×9 baking pan using cooking spray or butter.

In a large bowl, combine the flour, oats, brown sugar, and baking soda. Use a pastry blender (or your fingertips) cut in the cold butter until the mixture resembles coarse crumbs.

Reserve ½ cup of the crumb mixture. Press the remaining crumb mixture into the bottom of your greased baking pan.

Roughly chop any over-large pieces of fruit from the canned pie filling, then spread the filling over the pressed crumb crust. Sprinkle the reserved crumb mixture evenly over the top.

Bake for 25 – 30 minutes, or until the top is golden. Cool in the pan on a wire cooling rack, then slice into bars and serve.
