Super Sides – Spanish Rice

This quick and easy Spanish rice recipe will have you tossing out those boxes of rice with the little flavor packets inside. Give this super side a try the next time you make your favorite Latin-inspired meal.

Our family likes this rice a little on the spicy side, so I always opt for the hot sauce, but if you’re more of a mild one than a wild one, go ahead and leave it out. You can use any hot sauce you like (green works, too). I love Cholula! What’s your favorite?

Spanish Rice Recipe

Ingredients:

1 medium yellow onion – diced

1 small green bell pepper – diced

2 cloves garlic – minced

2 tbsp. olive oil

1 tsp. chili powder

1 – 28 oz. can diced tomatoes – with juices

1 cup water

¾ cup rice – uncooked

1 – 4 oz. can diced green chili peppers – with juices

¼ tsp. hot sauce of choice (optional)

½ tsp. salt

¼ tsp. pepper

½ cup shredded Monterey jack cheese (optional garnish)

Directions:

Heat the oil in a high-sided skillet over medium/high heat and cook the sweet pepper, onion, and garlic for 3 minutes. Add the chili powder and cook for 1 minute.

Stir in the rice, water, undrained tomatoes, undrained chili peppers, hot sauce, and salt & pepper. Increase the heat to high and bring to a boil.

Reduce the heat, cover, and simmer for 20 minutes or until the rice is tender and the majority of the liquid has been absorbed. Serve hot, garnished with shredded Monterey jack cheese, if desired.
