Weeknight Recipes – Chicken Pesto Bake

This recipe is so easy it’s like magic. Presto – dinner! You’ll be proud to serve this easy chicken, baked to perfection with pesto, tomatoes, and mozzarella. It’s easy to see why this dish ranks as a simple weeknight recipe, with only four ingredients and virtually zero prep, this meal practically makes itself! For an even faster dinner, use jarred pesto and pre-sliced mozzarella cheese.

This meal can be as simple as the chicken breasts served alongside a simple side salad and a loaf of garlic bread. You can fill the menu out a little by adding green beans or a similar green veggie side.

Chicken Pesto Bake Recipe

Ingredients:

4 chicken breast halves – boneless and skinless

½ cup basil pesto

3 vine-ripened tomatoes – sliced

Fresh mozzarella cheese – sliced

Directions:

Preheat oven to 400°. Line a baking sheet with foil.

Combine the chicken and pesto in a large bowl and toss to thoroughly coat the chicken. Lay the chicken on the baking sheet, and brush the breasts with any remaining pesto.

Bake for 20 – 25 minutes, or until the internal temperature of the chicken reaches 165°. Remove the chicken breasts from the oven and cover each with tomato slices, then top with slices of mozzarella.

Return the dressed chicken to the oven and continue to bake for 5 minutes more, or until the cheese is melted and bubbly. Serve hot.
